EPUBIN
EPUB is the open standard that most e-readers and reading apps expect. Text reflows to fit whatever screen you are on, so a paragraph wraps differently on a phone than on a 7-inch reader, and the reader can change type size without wrecking the layout. One EPUB file carries the chapters, images, styling and any embedded fonts the book needs. Pick it when you want a single file that opens on Kobo, Nook, Apple Books and most Android reading apps. Kindle hardware is the main exception, and that is what AZW3 is for.
HTMLZOUT
HTMLZ is a book packed as ordinary web files: the HTML holding the text, a stylesheet, and the images, zipped together into one archive. Nothing sits behind a proprietary container, so this is the format to pick when you want to edit a book by hand, feed it to your own publishing script, or inspect how the markup came out of an earlier conversion. Calibre reads and writes it, which makes it a comfortable stopping point between two other formats. Choose HTMLZ when the file is a working copy rather than the version someone will read.
